Ingredients

    1 large cucumber (81/4")
    4 plum tomatoes, quartered
    1 cup fresh cilantro, leafy part only, no stems
    1 jalapeno pepper seeded and minced
    2 tbsp vinegar
    2 tbsp olive oil
    1 tsp sugar
    1 tsp ground cumin
    1/2 tsp salt

Directions

in a food processor, blend all ingredients till chunky consistency.

may want to drain on paper towels to eliminate liquid from the cucumbers,

serve with baked blue corn chips!
