Pure white and not too sweet
Number of Servings: 20
Ingredients

3/4 cup Crisco or Veg Shortening
1 1/2 cups of sugar
2 teaspoons Clear Vanilla extract
2 3/4 cup sifted Cake Flour
1/2 teaspoon salt
4 teaspoons Baking Powder
1 cup of milk, at room temperature
4 egg whites, at room temperature
Directions
Makes 6 cups of cake batter. Preheat the oven to 350 degrees F. Grease and flour the sides and bottom of the cake pans.
In a large bowl of an electric mixer, cream the shorting until light and air. slowly add 1 cup of sugar, continually beating until fluffy. Add the vanilla.
In small bowl . sift the dry ingredients together. Add 1 tablespoon of the dry ingredients to the shorting mixture and mix well. then add 1 tablespoon of milk to the shortening mixture and mix well. Continue adding these ingredients, alternately and mixing well after each addition until all of the ingredients have been combined.
In another bowl, beat the egg whites until fluffy . Slowly add 1/2 cup of sugar and beat until stiff, shiny peaks form. Gently fold the egg whites into the batter mixture until blended being careful not to over mix. Pour into prepared pan . Bake about 20 minutes, then invert onto wire racks and remove the pans. cool completely. serving: 20
