Introduction

Make this yummy soup when you have some partial packages of frozen veggies. The added couscous thickens the soup and gives it a "stick to your ribs" texture. Ingredients

    1 lb. extra lean ground beef
    2 14.5 oz cans of Hunt's Petite Diced Tomatoes
    2 cups frozen green beans
    1.5 cups frozen speckled butter beans
    half of a large yellow onion chopped
    2 heaping tbs minced garlic
    .5 cup couscous
    Italian seasoning to taste
    .5 tsp. chilli powder
    64 oz water

Directions

Boil lean ground beef, garlic, seasonings and onion in a large stock pot. When meat is cooked add the rest of the ingredient except the couscous. Cook on slow boil for 1.5 hours. Add couscous and cook for 30 more minutes.

Makes 8 + 1 cup servings
