Ingredients

    1 cup 1% cottage cheese
    2 cups egg substitute (I use Kirkland Egg Starts)
    1/2 cup Shredded Mexican Cheese Blend
    I can diced tomatoes with green chilies, drained
    3 Tbsp diced raw onion
    Mrs. Dash to taste

Directions

Pre heat oven to 375. Spray 12 muffin cups with cooking spray. Mix all ingredients together in a big bowl. Spoon into muffin cups. Cook 45ish minutes until knife comes out clean. I like to add extra green chilies. Adds like 2 extra calories each.

    This recipe is fine. I added diced bacon to give it some more flavor. The individual servings makes it easy for a quick weekday breakfast on the go! - 3/22/09
