    Pancake Mix
    Eggs
    Milk
    Vegetable Oil
    Wheat Bran
    Flax Seeds
    Sugar
    Nutmeg
    Vanilla Extract
    Almond Extract (optional)

Directions

This recipe makes approximately 6 servings, or about 24 "bites".

Follow the instructions for making pancakes (using 2 cups of mix, 1 cup of skim milk, and 1 egg--in place of the second egg, use .25 cup of vegetable oil) on the box. In the mix, add about .5 cup of wheat bran and about 3 tbsp of flax seeds. Add about .25 cup of sugar, 1 tsp of nutmeg, and about .5 tsp of vanilla and almond extracts (optional).

Peel two raw sweet potatoes, cut into cubes, and microwave until you can mash them. Add water to keep them moist and help them to cook. Each sweet potato takes about 8-10 minutes total, but every 3 minutes or so, I cut the cubes up even more and begin to mash them. Once you can mash them well, they are ready to add to the mix.

Stir mashed sweet potatoes into the pancake mix. The batter will be lumpy. Spoon batter onto griddle. Once you have turned the pancakes with the spatula, allow them to cook for a minute, then cut them into quarters. I find it much easier to know when they are done, as it can be difficult to tell by looking at the outside of these pancakes.

They have a very sweet, nutty flavor and are very high in fiber! I use a little bit of light syrup on them sometimes, but that isn't necessary. These make an excellent breakfast option, or you can use them for dinner. They go quickly! :-)
