Introduction

Number of Servings: 6

Ingredients

    1lb frozen shelled edamame
    3 cups frozen corn kernels
    1 chopped red bell pepper
    3/4 cup sliced green onion
    1/2 cup finely chopped red onion
    1/4 cup chopped fresh Italian parsley
    2 Tbps chopped fresh oregano

    Dressing
    1/3 cup fresh lemon juice
    2 Tbsp Dijon mustard
    2Tbsp olive oil
    3/4tsp salt
    3/4tso fresh ground black pepper

Directions

Prepare edamame according to package instructions. Drain and rinse in cold water. Combine edamame, corn, bell pepper, green onion, red onion, parsley and oregano.

In large bowl whisk lemon juice, mustard, olive oil, salt and pepper. Add veggies to bowl and toss to coat. Refrigerate.

    This was very tasty- I took it to a healthy food potluck, and it was a hit. I omitted the onion and made the dressing exactly as specified. I used 1 and a half fresh lemons. Delicious! - 4/26/14

    Edamame was DELICIOUS! The combination of veggies is perfect. We, however, did NOT like all the lemon. I washed the lemon off and started over, substituting ff ranch dressing. Probably added a few more calories, but worked for my family! - 2/22/12
