Introduction

A nice side dish to serve with baked chicken, green beans and home-grown tomato slices. A nice side dish to serve with baked chicken, green beans and home-grown tomato slices.
Number of Servings: 8

Ingredients

    Summer squash, 8 medium
    Onion, 1 c. diced
    American cheese, 2-3/4 oz. slices
    Sour cream, 1 c. (may use reduced fat variety)
    Splenda, 4 packets
    Salt, 2 tsp.
    Pepper, 1/4 tsp. (optional)

Directions

Wash and removed ends from squash. Slice squash and place in dutch oven. Add diced onions and salt. And fill to above vegetables. Bring to a boil and boil until squash is tender. Drain water using a colander, then return vegetables to dutch oven over low flame. Add American cheese, sour cream and sweetener. Add pepper to taste if desired. Stir ingredients and allow to cook on low heat for 10 more minutes. This dish is ready to eat, but you may wish to pour it into a casserole dish and sprinkle cheese on top if taking to a potluck.

    Dish was good. I think I will add some crushed low fat crackers to the top next time, and brown in oven. - 3/16/10
