Ingredients

    2 round Rice Paper Sheets (Tapioca paper)
    2 Bib Lettuce Leaves
    2 oz Smoked Salmon
    1 Cucumber, cut into long matchsticks
    1 Avocado, sliced

Directions

Dip rice paper sheets, one at a time, in a bowl of hot water for 10 seconds or until just softened. Put on a wet chopping board, working quickly, place a lettuce leaf, a piece of salmon, cucumber sticks and avocado slice onto one half of the wrapper. Fold remaining part of wrapper up over two thirds of filling and roll, forming a cone.

Place rolls on a serving platter and cover loosely with damp paper towels. Cover with plastic wrap and refrigerate until ready to serve.
