Introduction

Nothing could bring more comfort than a recipe from mom's kitchen. Nothing could bring more comfort than a recipe from mom's kitchen.

Ingredients

4 4 oz. Eye of round steaks
    Flour for dredging
    1 Tbs EVOO
1 jar of Heinz beef gravy
    .5 onion, sliced
    1 can of mushrooms
1 pouch of Betty Crocker sour cream and chive boxed mashed potatoes

Directions

Preheat oven to 325 degrees.

Prepare the meat by dredging it in flour and tenderizing it. Dredge the meat in flour once more and season it with pepper before browning it in a dutch oven that has been coated with EVOO over med high heat.

Once the meat has browned, remove it from the pan and coat the bottom of the dutch oven with a 1/4 of the jar of gravy. Deglaze the pan. Add half of the onion and half of the mushrooms to the gravy. Layer the steaks on top of the gravy. Coat them with the remainder of the gravy and add the rest of the onion and mushrooms. Add a 1/4 gravy jar of water to the pan.

Cover the dutch oven and place it in the preheated oven for 2 hours.

After two hours, remove the pan from the oven. Prepare the mashed potatoes according to the box (trust me, they're even good with skim milk!). Serve the meat and potatoes covered with the gravy.

I usually serve this dish with a serving of the vinegar four bean salad recipe.

Makes four servings.
