Ingredients

    3 cloves of garlic (or more if you like)-minced
    one large onion-diced
    1/2 cup of shredded carrots
    2 large celery stalks- cut in small pieces
    3 medium zucchini - cut in small pieces
    3 medium tomatoes- cut in small pieces
    Zatarain's Creole Seasoning ( or spicy seasoning of your choice)
    Grated parmesan cheese
    Extra light Olive oil, approx. 2 tbsp.
    Fresh parsley
    Italian Seasoning



Directions

Put olive oil into large skillet on med-high heat. Add minced garlic, onion and shredded carrots. Cook for couple minutes so flavor in infused in oil. Add celery and zucchini and cooked for approx. 8-10 minutes till celery and zucchini start to soften, stirring frequently. Add in tomatoes and parsley, and Italian Seasoning. Season with Creole seasoning to taste. Cook till tomatoes heat up and flavors combine, stirring frequently.
Top with grated parmesan cheese and enjoy!
