Ingredients

    Turkey MeatBalls
    1 Lb Ground Turkey
    1 cup of chopped onion
    1 large clove of garlic minced
    1/2 cup of grated parmesan Cheese
    1 egg
    1 tsp salt
    1/2 of Black Pepper
    Mix Ingredients and put in refrigerator to chill

    1 cup chopped onion
    1 large clove of garlic minced
    1 tbsp of olive oil
    Saute onions and garlic in olive oil for 3 minutes

    Take out turkey from refrigerator, wet hand and roll mini meatball and add to sauted onions and garlic. Let cook about 10 minutes until meatballs are lightly browned.

    2 medium zucchini chopped
    4 cups of shredded cabbage
    1 jalapeno pepper minced
    4 cups of Chicken Broth
    4 cups of Tomato Juice
    3- 14.5 ounce cans of Diced Tomatos
    2 tsp of Basil
    1 tsp salt
    1/2 tsp pepper
    Add to meatball and cook for 30 minutes until cabbage and zucchini is cooked to your liking

    2 cups of baby spinach
    add to soup 5 minutes before serving

    Garnish with parmesan cheese

    Very Good
    made this tonight and it was very good I used a bag of frozen mixed veggies(corn, broccoli and cauliflower) since I didn't have any zucchini , cabbage or spinach. I did everything else the same and everyone loved it - 2/14/12
