A great recipe we obtained from an Italian woman in Naples, Italy. A great recipe we obtained from an Italian woman in Naples, Italy.
Number of Servings: 6


    3.5 oz. smoked salmon
    1 medium onion, finely sliced
    2-3 ripe tomatoes, finely diced
    1 lb butterfly pasta (farfalle)
    1/2 C parmesan cheese, grated
    1/4 C butter
    7 oz. panna chef or heavy cream
    salt to taste


Saute onions in butter, then add salmon*, tomatoes and salt. Let simmer for 20-30 minutes with lid on pan. Remove lid and add cream. Set pan aside. Boil pasta according to instructions, drain, and add to salmon mixture, blending well. Sprinkle parmesan cheese on top.

Serves 4-6

*Note: Use either fresh or frozen smoked salmon, not canned.
