Ingredients

1 cup of zucchini, sliced 1/4 in thick
1/4 cup Flour
1/4 cup Bread Crumbs
1 Egg, beaten
Garlic Powder to taste
Canola Oil for frying
Directions
In a small bowl, mix together the flour, bread crumbs, and garlic powder. In a second small bowl, beat the egg.
Add oil to a frying pan and begin to warm.
Take each zucchini piece and dip in the egg. Let excess drip off. Then, dip in the flour mixture and place in hot oil. Fry until browned, then flip over and brown other side. Cook until zucchini is soft.
Makes one serving of appoximately 8-10 pieces.
Serve with hot marinara sauce if desired.

A quarter cup of flour was way too much when I made this. Also, next time I will try something like oat flour and more bread crumbs. However, the zucchini was tender and yummy and I had a hard time not stealing my hubby's when I finished mine! We made it as a side and it will be a regular here. - 3/5/09
