Ingredients

    9 eggs
    3/8 cup 2% milk
    3/8 tsp. salt
    1 cup crumbled corn tortillas
    1 cup chopped chicken or turkey sausage or lean ham
    1/3 cup chopped onion
    1/3 cup chopped green pepper
    1/2 T. butter
    1 cup shredded cheddar cheese
    1/2 cup chopped tomato

Directions

Lightly beat eggs with milk and salt; add tortillas. Set aside. In a large skillet, saute sausage or ham, onion and green pepper in butter. Add egg mixture and cook over medium heat, stirring occasionally. until eggs are set. Remove from the heat; gently stir in cheese and tomato. Serve with fat-free sour cream and salsa. Makes 6 cups.

    I am curious why you would need butter when you already have a protien fat in your skillet (saugae) ?? it sounds good though - 2/16/09

    Because if you're using lean meat, you don't have any fat.
