Ingredients

I pkg Yve's Meatless Ground Turkey
1/2 medium onion, chopped
2 cloves garlic, minced
I can tomatoes, including juice
1 can corn
1 1/2 TSP Italian Seasoning
1 Tsp Oregano
Ground Black Pepper, to taste
6 Whole Wheat Buns
Directions
Brown onion and garlic in bottom of sauce pan. (I use cooking spray). Add meatless ground turkey and continue for a minute or two, just to warm through.
Add whole can of tomatoes and reduce heat to medium. Sometimes you need to adda bit of water to this mixture to prevent sticking. Add herbs, Combine well, and heat throroughly.
Add canned corn, and continue until corn is just heated.
This can be quick and simple.. Or if time permits, I like to let the "turkey"-tomatoe mixture simmer and develop more flavor, still adding the corn toward the end of the process.
Toast buns, and spoon about a cup of the mixture over them. Serve with a green salad--yum!!!
Makes 6 servingsof about a scant 1 cup.
