This was a great recipe; relatively simple to make and very delicious. It lasted us almost two weeks and we never got sick of eating it. - 1/1/09

Works well as a cassarole when you put the uncooked rice into the soup. Did not realize to cook rice first. I served with shredded cheese on top. My family loved it. Next time I will try with pre-cooked rice - 11/6/08

Made this tonight! Only had 1 green and 1 yellow peppers, so I used both of them. It turned out FANTASTIC! My husband just LOVES it! Says it's one of his faves, and he's not even TRYING to eat healthy! He also says that Frank's Red Hot extra hot sauce REALLY compliments it! Not for me though. - 11/4/08
