Introduction

This light meal is great in the summertime when red meat is just too heavy. This light meal is great in the summertime when red meat is just too heavy.

Ingredients

    1 tsp olive oil

    1 whole wheat tortilla

    2/3 cup mozzarella cheese

    1/2 cup frozen spinach (thawed)

    1/3 cup thinly sliced portabella mushrooms

    1 tsp ground cumin

    1 tsp minced garlic

Directions

Mix together spinach, cumin, and garlic in a bowl and set aside. Coat cooking area of skillet with a thin layer of olive oil. Lay tortilla on a medium-low heated skillet. Spread cheese and mushrooms evenly on half of the tortilla. Add spinach mixture on tortilla and fold the tortilla into a half-moon. When cheese begins to melt, flip the tortilla. When all of the cheese has melted, remove from heat and cut into fours.

    This was really easy to make and very good. I did not put the mushrooms in, but the spinach and cheese was very good. I will be making this again. - 8/24/07

    I actually did it without the mushroom - I love the spinach and cheese combination. The seasonings were really good - I hadn't tried cumin in a quesadilla before. - 3/13/07
