Ingredients

    * Ground beef, extra lean, 12 oz or 3/4 lb
    * Onions, raw, 1 small, chopped
    * Egg, fresh, 1 large
    * Saltine Crackers (Saltines), 7 cracker
    * *Kikkoman Lite Soy Sauce, 4 tbsp
    * *Pineapple, canned, 1 cup, chunks
    * Brown Sugar, .25 cup, packed
    * Cider Vinegar, .25 cup
    * Corn Starch, 2 tbsp
    * Water, tap, 1 cup (8 fl oz)
    * Green Peppers (bell peppers), 1 cup, strips
    * brown rice, 2 cups

Directions

Mix together beef, onion, egg, and crackers. Roll into small meatballs and place on cookie sheet. Cook at 350 until done - approx 15 - 20 min.
Meanwhile combine in large wok or saucepan Soy sauce, pineapple (including juice) , brown sugar and vinegar. Mix well and heat until it begins to boil. Combine corn starch with water (no lumps allowed ! :)
Stir into sauce, bring to a boil and simmer till it thickens. Stir in cooked meatballs and green pepper. Stir to coat; continue cooking for a couple minutes.
Serve over brown rice.

    My husband and 14 month old son absolutely loved these meatballs. I made a little angel hair pasta instead of the rice and added a little orange juice to the sauce, just cause I was in the mood. This will be a staple in our house! - 1/7/09

    Tasty! Hubby liked it. I used pre-made frozen meatballs and added a Sweet and Sour seasoning packet. Really easy and quick. Thanks for sharing! - 10/18/08
