Ingredients

    1 pound peeled and deveined shrimp
    1/2 cup chopped onion
    1/3 cup chopped celery
    1/4 cup chopped green pepper
    2 cloves garlic, minced
    2 tbs cooking oil
    2 cups chicken broth
    1 14-1/2 ounce can diced tomatoes, undrained
    8 ounces andouille or kielbasa sausage halved and cut into 1/2 inch pieces
    3/4 cup uncooked long grain rice
    1 teaspoon dried thyme
    1/2 teaspoon dried basil
    1/4 teaspoon red pepper
    1 bay leaf

Directions

1. Thaw simp, if frozen, set aside. in 12 inch skillet cook onion, celery, sweet pepper, and garlic in hot oil until tender. Stir in chicken broth, undrained tomatoes, sausage, rice, thyme, basil, 1/4 teaspoon black pepper, red pepper, and bay leaf. Bring to boiling; reduce heat. Simmer, covered, for 15 minutes.

2. Stir in shrimp. Return to boiling. Simmer covered, about 5 minutes more or until shrimp turn opaque and rice is tender. Discard bay leaf.

    Very Good
    I added extra bay leaves and a tsp of chili powder. I also used mild Italian turkey sausage and canned tomato sauce (kids don't like the chunky tomatoes. This was very yummy!!!!! - 6/20/10
