Number of Servings: 12

Ingredients

    whole wheat flour 11/4 cups
    oat bran 2/3 cups
    brown sugar 1/2 cups
    baking soda 1 Tbsp
    baking powder 1/2 tsp
    natural unflavored yogurt 1/3 cup
    egg 1 large
    olive oil 1 Tbsp
    chopped apple 1 average
    chopped prunes 1/2 cup
    fresh grated orange peel 2 Tbsp
    mixed nuts 1/2 cup

Directions

in a large bowl mix together (with a large spoon) whole wheat flour and bran.
add apple, prunes, orange peel and nuts and mix (still using the large spoon)
in a small bowl mix together, yogurt, baking soda, baking powder, olive oil, brown sugar and egg add to dry ingredients
spoon into baking cups approx 6 large muffins (I make 12) they are very filling!
Bake @ 350 15 mins
