Introduction

Number of Servings: 9

Ingredients

    Flour, white, 1 cup
    Yellow Cornmeal, 1 cup
    Granulated Sugar, 2 tsp
    Baking Powder, 1 tsp
    Salt, .5 tsp
    Lard, .25 cup melted, or 1/4 cup vegetable oil
    Milk, 1 cup
    Egg, 2 medium


Directions

Lightly grease a 9 inch X 9 inch pan on the bottom and halfway up the sides. Preheat oven to 425f/GM 7.

Combine all the dry ingredients in a large bowl.

Combine melted lard, milk, and eggs in a second bowl and beat briefly.

Add wet ingredients to dry all at once and stir until just mixed.

Spoon into the prepared pan.

Bake for 20 - 25 minutes until skewer inserted in the middle comes out clean and it starts to pull away from the sides.

Serve with ham and bean soup.

    Lard? Although it's not a big deal, I would try to use something a bit more healthy... - 9/23/08

    You can substitute vegetable oil. I believe though that the lard is healthier for me than over processed oils.

    I'm gonna make this to go with our chili tonight! I always have used the Jiffy cornbred mix because i have never been able to make it from scratch! Thanks for sharing! - 9/23/08
