Introduction

Nice low calorie casserole. Leaves lots of calories for some nice wholemeal bread to go with it.

The venison sausages in the calculation are from Tesco, a UK supermarket. You can replace them with other less-then-5% fat sausages - preferably game of course.

Ingredients

    6 Venison sausages (these are from Tesco)
    2 cans of tomatoes
    0.5 small Butternut Squash (approx 300 grams)
    1 small Zucchini,
    A few Shallots chopped
    1 red bell pepper
    One red chili pepper
    Garlic, 1 clove (remove)
    Orange Peel from half an orange
    1 Bay Leaf
    A handful of black pepper corns
    Some fresh thyme

Directions

Preheat the oven to 200°C/400°F/Gas 6 and chop all the vegetables.

Fry the sausages in fry-light for 2-5 minutes until lightly browned.

Mix all other ingredients well. Put in the sausages in an oven tray an and poor the mixture with the vegetables over it.

Cook in the oven for 25-30 minutes.

    As I bought some venison sausages today from my local market, I shall be giving this recipe a try. It sounds very nice, but my husband and myself won't be adding the butternut squash - what else do you suggest instead please? - 2/5/09
