Introduction

Ingredients

3 tablespoons red onion, minced
2 cups pineapple, diced
1 large mango, diced (1 1/2 cups)
2 1/2 tablespoon fresh lime juice
1 large jalapeno pepper, seeded and minced (don't touch the seeds!)
1/4 teaspoon table salt
3 tablespoons cilantro, fresh, chopped (or to taste)
Directions
Makes 8 servings. Serving Size: 1/2 cup
1. Soak onion in ice water in a small bowl for 15 minutes. drain. (This tones down the onion taste.)
2. Combine onion with remaining ingredients (except cilantro) in a medium bowl. Cover and refrigerate until ready to serve. Stir in cilantro just before serving.
This can be refrigerated up to four days. Yields about 1/2 cup per serving. Makes four cups total.
