Ingredients

    6 whole beets, greens removed and saved
    1 Tbsp balsamic vinegar
    3 Tbsp extra virgin olive oil, divided
    2 Tbsp water
    fresh lemon juice
    2 medium shallots, finely chopped
    beet greens well washed and chopped

Directions

Scrub beets and stem them whole around 40 minutes. Then run under cold water and gently peel off skin. Chop them into small chunks and place in a medium bowl.

In a small bowl, whisk vinegar, water, olive oil, lemon juice, and salt and pepper. Pour over beets and set aside.

In a large saute pan, heat oil. Add shallots and saute for 2 minutes. Add chopped greens and cover. Simmer for 5-7 minutes. Add beets and heat until warm through.
