Ingredients

    Turkey, Ground turkey, 93% lean, 16 oz
    Yellow or Green Peppers, 6
    Stewed Tomatoes, Canned, No salt, 1 Cup
    Beans, black, 1 cup
    Beans, navy, 1 cup
    Yellow Sweet Corn, Canned, 1 can (12 oz)
    Garlic powder, 1.5 tbsp
    Oregano, ground, 1 tsp
    Rosemary, dried, 1 tsp
    Onions, raw, 2 tbsp chopped
    Parmesan Cheese, grated, 12 tbsp

Directions

Preheat Oven at 350

Brown Turkey and onions with Garlic, Oregano, and Rosemary. Add Beans and Corn to heat through.

Wash and Cut top off of Peppers, (remove seeds, etc.) and fill with Turkey Mixture. Place in a Baking dish and bake in oven for 35-40 minutes. Top each pepper with 2 Tbsp Parmesan cheese and cook an additional 5 minutes.

Allow to stand a few minutes before serving.

    Very Good
    Very Good. Peppers would be softer and easier to eat if they were precooked a little. Would be good with chili powder and Mexican spices in place of oregano and rosemary and lowfat colby-jack in place of parmesan cheese. - 11/1/11
