Introduction

My husband's chili recipe - very tasty with a little shredded cheddar and some plain yogurt on top! Also very good as a topping for home-made nachoes or as a filling for burritos. Ingredients

    8 oz (1/2 lb) 93% lean ground beef
    8 oz diced fresh mushrooms
    1 t oregano
    1 T chili powder
    1 T smoked paprika
    1 t cumin
    2 t garlic powder
    1 t chipotle chili powder
    Black pepper (severa turns of a grinder)
    2 cans petite diced tomatoes, with liquid
    1 can black beans, with liquid
    1 6-oz can tomato paste
    1 cup frozen corn

Directions

Brown meat and mushrooms until excess water boils off and meat is cooked. Add spices, cook for 1-2 minutes. Add tomatoes, beans, and tomato paste. Bring to a boil, simmer 15 minutes. Add corn, simmer an additional 5 minutes, or until you're ready to eat (no longer than 1 hour total unless you add some water).

Secret Ingredient for Special Occasions: Add 2 1-oz shots of good whiskey (Gentleman Jack is what we use) just after adding the tomatoes and beans.
