Introduction

Great make-ahead dish for breakfast, brunch, lunch or dinner. Great make-ahead dish for breakfast, brunch, lunch or dinner.

Ingredients

    5 cups frozen hash browns
    8 large eggs
    2 cups milk
    8 oz shredded Cheddar cheese
    8 oz extra lean ham - diced
    1 cup diced onion
    1 cup diced green pepper
    1 10oz pkg frozen chopped spinach (defrosted & drained very well)
    2 tsp yellow mustard
    Black pepper, to taste

Directions

Spread hash browns in greased 9x13 baking dish. Top with vegetables, ham & cheese. Beat eggs, milk, mustard & pepper and pour over casserole. Cover and refrigerate at least 1 hour - up to overnight. Bake uncovered 1 hour at 350 degrees.

    Incredible!
    This was very good. My whole family enjoyed it. The only thing I changed was the spinach, I didn't have any frozen on hand just fresh so I used that. I will make this again. - 5/1/14
