Introduction

I just sort of slapped this together one night and really liked it. I just sort of slapped this together one night and really liked it.
Number of Servings: 5

Ingredients

    1 cup chopped carrots
    1 bell pepper (I actually used about 1/3 each of 3 different colored peppers)
    1 small to medium size onion
    2 medium potatos
    16 oz beef stew meat ( I used a chunk of roast that I hadn't cooked yet)
    2 Tbs Olive oil
    5 cups water
    2 beef bullion cubes

Directions

Chop all veggies to about 1 inch chunks and set aside.
Chop meat into pieces of about 1-1.5 inches.
Brown meat in olive oil and then add in all of the veggies, water, and bullion. Cover and let simmer for about 45 min. Should make 5 or 6 servings of about 2 cups.
