Introduction

A delicious Healthy salad from the northern region of Italy. Great served both cold or warm. A delicious Healthy salad from the northern region of Italy. Great served both cold or warm.
Number of Servings: 8

Ingredients

    Makes 8 1 cup servings

    1 cup dry Barley
    1 15 oz can canellini beans
    1 cup celery
    1 cup bell peppers assorted colors (optional)
    1 cup peeled cucumber (seeded)
    1 oz. chopped sundried Tomatoes in Oil
    1/2 cup diced red onion
    lemon rind
    3 tbsp Lemon Juice
    1/4 cup olive olive oil

Directions

cook barley per package instructions.
After Barley has cooked include the rest of the ingredients and mix well. Refrigerate overnite.

Options: Can be mixed with chicken, salmon, feta cheese and or tuna. If so I would recommend cutting serving of bean salad in half.
