Number of Servings: 6

Ingredients

    1/2 lb lean ground turkey
    1 cup breadcrumbs
    1/2 c butternut squash puree
    1 clove garlic minced
    1 tsp salt
    1/4 tsp pepper
    nonstick cooking spray
    2 tsp olive oil
    1 26-oz can whole peeled tomatoes w juice
    1/2 cup water
    1/4 cup carrot puree
    1/4 garlic powder
    pinch cayenne pepper
    1 bay leaf
    1 lb spaghetti or angel hair (pref whole wheat)

Directions

-Combine turkey, breadcrumbs, butternut squash, garlic, salt and pepper. Shape into 1-inch meatballs
-Coat nonstick skillet with spray, set over high heat. Add olive oil and meatballs and brown for 4-5 minutes, turn occassionally.
-Add pureed tomatoes, water, carrot puree, garlic powder, cayenne, bay leaf and salt & pepper
-Reduce heat to low and simmer 15-20 minutes or until meatballs are no longer pink in center.
-Remove bay leaf
-Boil pasta according to package directions. Drain, turn into serving bowl and spoon meatballs and sauce over it.
