You can substitute lemon juice for Marsala wine.

Ingredients

    1 tsp olive oil
    1 cup chopped yellow onion
    1 package sliced crimini mushrooms, 278 g
    1 cup frozen peas
    1 cup chopped, boiled red potatoes
    1 tsp sea salt
    2 tbsp Marsala Cooking Wine

Directions

Add garlic to the olive oil and saute until just golden.
Add chopped onions and cover. Cook until translucent and starting to brown slightly.
Add Mushrooms and cook covered for a min.
Add Marsala cooking wine.
Add microwaved peas (2 mins) and boiled red potatos.
Cook for 5 mins covered.
Add salt to taste.

Makes 2 servings (entrees)

    Very Good
    I used a sweet dessert wine instead of marsala and no salt. Although the recipe didn't specify how long to boil the potatoes, I found about 15 minutes worked. - 2/11/11
