Introduction
Definitely use the lite sausage when you make this!! I learned my lesson!! Very tasty, but very high in fat when using regular smoked sausage. Definitely use the lite sausage when you make this!! Ingredients

1 pkg smoked sausage
2 pounds red potatoes
8 oz lite Velveeta cheese
16 oz lite Daisy sour cream
2 servings Parmesan Cheese style grated topping
1/2 onion, chopped
salt and pepper to taste
Directions
Slice smoked sausage into bite size pieces and cook with onion.
Cook potatoes until just done. Reserve 1/4 of potatoes and slice thinly.
Use remaining 3/4 of potatoes and smash with sour cream. Stir in Velveeta, sausage with onion and add remaining potato slices, mixing gently. Sprinkle with salt and pepper if desired.
Grease or spray baking dish with nonstick spray and add potato mixture. Sprinkle Parmesan style topping on top.
Bake at 350 degrees for 30 minutes.
