Ingredients

    -6 egg whites, beaten until fluffy

    -1 cup non fat cottage cheese

    -2 scoops whey protein

    -1 cup oatmeal, uncooked

    -1/4 cup wheat germ

    -1/4 cup flaxseeds

    -1 tsp baking powder

    -1 tbsp canola oil

    -nonstick cooking spray
    -vanilla extract (optional)

Directions

1. place all ingredients except beaten egg whites in blender or food processor and pulse or blend until mixture is uniform.


2. pour blended ingredients into a bowl and add egg whites. fold until just blended.


3. prepare a griddle with cooking spray. ladle pancake mixture onto griddle and cook until both sides are browned.


-makes 8 pancakes

    These are great! I doubled the batch to have all week. I top one with Naturally More PB for a after workout snack. Since I live in AZ I can put a frozen one in a sandwich bag and put it on my dash and its thawed and warmed by time I am done with my errands. Thanks for sharing. - 8/28/09

    Lol you know what's funny is i had them again this morning (made a big batch) and i actually put almond butter on them! it tasted great =D
