Introduction

These sandwiches are fantastic and really tide you over until lunch. I like to make up a couple batches at a time and freeze them so I can have breakfast everyday for a few weeks! Just pop them in the microwave if they or frozen or put them in the fridge the night before to thaw. These sandwiches are fantastic and really tide you over until lunch. I like to make up a couple batches at a time and freeze them so I can have breakfast everyday for a few weeks! Just pop them in the microwave if they or frozen or put them in the fridge the night before to thaw.

Ingredients

    6 whole wheat english muffins
    1.5 cups egg substitute, divided
    3 slices fat free American cheese singles
    6 Morningstar farms veggie sausage links
    Salt (optional)

Directions

Preheat oven to 350 degrees. On a baking sheet, place english muffins open and face up. PLace in oven for 5-10 minutes depending on how crispy you like your muffin. Take a muffin pan and pour 1/4 of egg substitute into 6 muffin wells and sprinkle with salt (to taste). Cook in oven for 5-10 minutes to desired doneness. PLace 6 veggie sausage patties on baking sheet and cook for 8 minutes. In the meantime, slice 3 cheese singles in half. When everything is done cooking, make a sandwich with toasted english muffin, egg, half a slice of cheese, and veggie sausage patty. You can eat right away or freeze until ready to use. Makes 6 servings.
