I put this together at work today...it hit the spot! I put this together at work today...it hit the spot!

Ingredients

    1 can (5 oz) Hormel 98% FatFree Breast of Chicken in Water
    1 Minute Rice Single Serve Brown Rice
    1 Mini Babybel-Light Cheese
    Salt/Pepper to taste

Directions

Drain canned chicken. Cook rice in microwave as directed. Half-way through cooking time (30 seconds), combine rice and chicken into bowl. Add cheese on top. Continue cooking for remaining 30 seconds. May need to cook additional 30 seconds longer, depending on your preference. Season, stir, and enjoy a quick lunch at work!

    O.K.
    This was O.K. But for some reason it just wasn't something I'd eat again. Seemed like it needed to be creamy. May try sometime with left over chicken breast, not canned. Thanks for the idea. - 3/21/09
