Introduction

Ingredients

2 ounces raw quinoa macaroni (You can find this at the natural health store- it;s lower in calories and higher in protein than regular pasta)
1/4 cup nonfat cottage cheese
1slice Kraft Fat Free Singles Cheese slice
1oz. Skim milk mozzarella, shredded
1/2 cup skim milk (Or less, just to water down the sauce a bit)
1 T each chopped onion and garlic
salt and Pepper to taste
Directions
Preheat toaster oven to 300*
1. Boil your pasta according to directions on the box. Drain (but don't rinse) and set it aside.
2. Meanwhile, in a small skillet, spray a bit of butter flavored cooking spray, sautee onions and garlic until golden and fragrant- add the cottage cheese and the Kraft slice.
3. You can dilute the sauce as necessary with the skim milk- it shouldn't be runny, but don't make it too thick either- you'll get clumpy macaroni- ew!
(At this stage, you could stir in leftover chopped veggies if you like, but they aren't included in the nutritional information)
4. Mix the sauce in with the macaroni in an oven proof dish (a large ramekin or french onion soup bowl work great)
5.Sprinkle with mozzarella cheese and place in your toaster oven. Bake it for about 20 minutes, until the cheese is bubble, then switch on the broiler to brown the top.
