Introduction

I knew I wanted a salad, but I didn't have a lot of fresh produce. So I came up with this out of my freezer, fridge, and pantry! I didn't even use salad dressing on it!

Ingredients

    1 1/2 cups fresh spinach
    3/4 cup frozen corn
    1/2 cup canned black beans
    1 tbsp chopped red onion
    3/4 oz shredded cheddar cheese

Directions

Place the corn in a microwave safe bowl, cover, and heat in the microwave for about 2 minutes. Drain and rinse the black beans. Once the corn is done, mix the corn and beans

Place the spinach on the plate. Add the corn and beans. Sprinkle the onions over the top. Add the cheese.

Serves 1
