Introduction

I got this recipe from a friend who was on Weight Watchers. It's a very light cake and is deliciously moist and rich. I got this recipe from a friend who was on Weight Watchers. It's a very light cake and is deliciously moist and rich.

Ingredients

    1 box dry cake mix
    12 oz can of diet soda
    1 tub of light whipped topping

Directions

Do NOT follow the instructions on the boxed cake mix for this recipe. Instead:

Emtpy a regular boxed dry cake mix, any flavor*, into a medium bowl. Add a 12-oz can of diet soda, any flavor*. Using an electric hand mixer, mix the two ingredients very well. Spray a 9x13 inch baking pan with cooking spray. Pour the mixture into the pan and bake according to temperature and time recommendations on the box of the cake mix.

Allow the cake to cool completely. Then top with an entire tub of lite whipped topping. Cut into 12 squares. PERFECT light dessert.

*I recommend using diet 7-up or diet sprite for white or lemon cake mixes and diet Coke or diet Pepsi for chocolate cake mixes. You can also spruce up a white cake mix by adding fresh, sliced straberries atop the whipped topping - a very light version of strawberry shortcake!

    I've tried this--a friend of mine made it for me--and it was so delicious! I didn't miss the fat and calories of regular frosting and cake. - 6/10/09

    This is one of my favs, I use diet cherry coke with chocolate cake mix, a bundt pan once cake is mixed and in pan I spoon 1/2 can no sugar added cherry pie filling as it bakes the cherries sink 2 the middle moist and delicious without the guilt - 10/5/09

    i've made cake and cupcakes this way a lot and they really do turn out fabulous. to make them even more moist, you can add a packet of sugar-free pudding mix to the dry cake mix during the mixing stage. very tasty! no one ever believes how low the calories are! - 7/14/09

    well, I have not made the cake but the soda is a good idea, it ads a lot of air to the cake, from my past expierence in baking. - 10/5/08
