Introduction

This is my version of HappyMomof_3's Chicken and Black Bean Chili. I only modify recipes because I try to use things I have in my house before making a shopping trip! Ingredients

    2 lbs boneless, skinless chicken breast
    1 15 oz can of black beans, drained and rinsed
    1 28 oz can of diced tomatoes
    1 can of Cambell's 98% Reduced Fat Cream of Mushroom soup
    1 pkg of taco seasoning
    1 can of diced green chilies

Directions

Throw everything except for the diced green chilis in the crock pot. Cook on low for 4-6 hours (I did 5 and it was perfect!). Take chicken out and shred it and put back in. Add green chilies. Serve 1/2 hour to hour later.

I put this over rice so if you do the same, you'd have to add that to your calorie count. Plus cheese. I love this. I love everything that comes out of my crock pot.

Original recipe called for salsa instead of tomatoes and no green chilies. Also gave sour cream option.

    I had to make some adjustments because I did not have the cream of mush. soup or the taco mix. I used tomato paste, an onion, chili powder and cumin. Thanks for the idea! - 11/8/08

    Excellent! Instead of the 28 oz of tomatoes, I used 10 oz of cilantro RoTel and 10 oz of enchilada sauce. I filled in the last 8 oz with the remainder of some fresh salsa I made. I also used cream of chicken instead.
    Turned out to be a super supper!

    Made this with Cauliflower mash and used diced tomato with chilli's. Everyone loved it. - 7/31/11
