Number of Servings: 6

Ingredients

    1 lb lean ground turkey
    1 package of taco seasoning
    1 teaspoon chipotle powder (optional if u don't like spicy)
    1 can fat free refried beans
    1 1/2 cups 2% lowfat sharp cheddar or cheddar/jack (shredded)
    1 cup salsa (i like TJ roasted garlic)
    2 green onions (chopped)
    1/2 cup canned or frozen corn
    1 tomato chopped
    3-4 oz baked torilla chips (crushed)



Directions

brown turkey and drain
add taco seasoning and chipotle powder as well as the amount of water called for on seasoning packet
put crushed chips on bottom of 8x8 pan
warm refried beans and then ix with 1 cup cheese and 1 cup salsa
pour bean mixture over chips in dish
add drained corn over bean mixture
add turkey mixture on top of corn
sprinkle remaining cheese on top of turkey
sprinkle chopped green onions on top of cheese
bake at 375 for 15-20 minutes or until cheese is bubbly.
take out of oven and sprinkle diced tomatoes on top, wait 5 minutes to serve.

    I used brown rice instead of tortilla chips & black beans in place of refried beans. (I almost always include extra veggies "hidden": chopped, minced, shredded carrots, cabbage, celery & spinach.) Exchanged cheese for a Nacho Cheese Soup. - 2/23/13
