Ingredients

    1/4 c olive oil
    5c onion
    4c red pepper
    5c eggplant
    5c snap beans
    9c summer squash
    1t salt

Directions

In extremely large heavy bottom pan heat the oil, add the onion and red pepper saute slowly until onion are transparent. Add green beans, eggplant and squash in that order. Put on a lid. low heat until done.
