Introduction

Ingredients

    1/2 cup Egg Beaters, Egg Substitute
    1/2 cup unsweetened Applesauce
    1/4 cup Sugar-Free Maple Syrup (in place of oil)
    1 tablespoon Blackstrap Molasses
    1/3 cup Sugar Substitute (I use Zsweet... Mix with Blackstrap Molasses for Brown Sugar sub)
    1 teaspoon Vanilla Extract
    1 cup Mashed Banana
    1.5 cups Soy Flour
    0.5 cups Whole Wheat Flour (or Whole Wheat Pastry Flour)
    1 teaspoon Baking Soda
    1 teaspoon Baking Powder
    1.5 teaspoons Ground Saigon Cinnamon (or another TOP QUALITY cinnamon)

Directions

Preheat Oven to 375 Degrees Fahrenheit.
Cookingspray-Grease or Papercup-Line 12 large Muffin cups.

In a large bowl, whisk together your Eggbeaters, Applesauce, Sugar-Free Maple, Brown Sugar Sub (Sugar Sub + Blackstrap Molasses), Vanilla Extract, and Bananas.
In a separate bowl, combine the flours (SIFTED!!!), Baking Soda, Baking Powder, and Cinnamon.
Add the Dry ingredient mix to the wet, combining JUST until all the flour is moistened by the wets.

Spoon batter into muffin cups until completely filled.

Bake for 20 minutes in your preheated oven (Center Racks, please! :) ), or until the tops bounce back when lightly pressed. Allow to cool COMPLETELY before removing from Muffin Tins!

    These didn't seem to have much banana flavor, but I also used only whole wheat flour, as I did not have any soy flour. Could have been my fault... - 10/20/08
