Ingredients

    4 cups all-purpose flour
    2 cups sugar
    2 teaspoons ground cinnamon
    2 teaspoons baking soda
    1 teaspoon salt
    1 (16 oz) can solid pack pumpkin
    1 cup vegetable oil
    2 eggs
    2 tablespoons milk
    2 teaspoons vanilla extract
    2 cups semisweet chocolate chips
    1 cup chopped walnuts

Directions

In a mixing bowl, combine flour, sugar, cinnamon, baking soda and salt. Add pumpkin, oil, eggs, milk and vanilla; beat on medium speed until well mixed. Stir in chocolate chips and nuts. Drop by tablespoonfulls onto greased baking sheets. Bake at 375 degrees F for 13-14 minutes or until edges just begin to brown. Cool for 2 minutes; remove to a wire rack to cool completely.

    I substituted Splenda for the sugar and skipped the walnuts. My non-health consious roommate tried them and had no idea that it was splenda! this recipe is super easy and yummy! - 10/29/09

    Yum! I made a lot of changes though :-) For flour, used half whole wheat half white; for oil used half oil, half unsweetened applesauce; cut 1/2 cup out of the sugar (used 1.5 cup); skipped walnuts. These changes helped with nutrition and still tasted great! Thanks for posting :-) - 10/2/09

    good cookies! I substituted splenda brown sugar for the sugar and added some oatmeal. and they were yummy. I will make this recipe again in the future. - 2/22/09
