Introduction

This is a simple and very healthy version of a classic salad - and it's got protein, carbs and veggies. Very well rounded! This is a simple and very healthy version of a classic salad - and it's got protein, carbs and veggies. Very well rounded!
Number of Servings: 4

Ingredients

    2 cans tuna packed in water
    1 lb. red potatoes
    1.5 lb. green beans (raw - DO NOT USE CANS!)
    .5 cup chopped or thinly sliced red onion
    4 hard boiled eggs
    1 cup halved small tomatoes, either cherry or smaller
    about 15 kalamata olives, chopped roughly
    4 T capers
    a few T of lemon juice
    about 4 T of olive oil
    salt and pepper to taste

Directions

Boil potatoes until soft in the middle. Cool and cut into bite-sized chunks. Prep green beans - cut off both ends and cut into 1.5 inch lengths, then steam or boil them for about 4 minutes until very green. Drain and add to cut potatoes. Add chopped or sliced onion, tomatoes, kalamata olives, capers and mix. Add lemon juice, olive oil and salt and pepper to taste. Makes four servings, serve each on top of one sliced hard boiled eggs and add greens if you would like.
