Ingredients

For Glaze:
1 tablespoon grainy mustard
1/2 cup ketchup
1/6 cup Splenda brown sugar
1/4 cup lemon juice, divided
For Meatloaf Mixture:
2 pounds 93/7 lean ground beef
1 cup Italian style dry bread crumbs
1/2 cup finely chopped onion (use food processor to chop extra fine if possible)
1/4 cup EggBeaters
1 teaspoon Better Than Bouillon brand beef flavored soup base, or beef bouillon granules
Directions
1. Preheat oven to 350 degrees F
2. In a small bowl, combine the mustard, ketchup, Splenda brown sugar (use twice the amount listed if using regular brown sugar), and *1 tablespoon* of the lemon juice.
3. In a separate large bowl, combine the beef, bread crumbs, onion, EggBeaters, soup base or bouillon, remaining lemon juice and 1/3 of the ketchup mixture..
4. Mix this well and place in a 5x9 inch loaf pan, or pat into a loaf shape on a raised edge baking sheet.
5. Bake at 350 degrees F for 1 hour, drain any excess fat, coat with remaining ketchup mixture and bake for 10 additional minutes.
Makes 8 servings, approx. 1/4 pound each
