Number of Servings: 6

Ingredients

    1 med. onion
    2/3 c vegetable stock
    8 oz dried macaroni
    2 tbsp butter
    1/3 flour
    1 1/4 skim milk
    1/2 c reduced fat cheddar cheese
    1 tsp prepared mustard
    4 smoked turkey bacon, cut in half
    2-3 firm tomoatoes, sliced
    fresh basil leaves
    1 tbsp freshly grated or shredded Parmesan
    salt and pepper to taste

Directions

Put onion and stock in pan, bring to boil and cook over low heat for 5-6 minutes until the stock has reduced entirely and onion is translucent.
Bring large pan of lightly salted water to boil and cook macaroni until al dente.
Put butter, flour, and milk in heavy pan and whisk over medium heat until thickened and smooth. Stir in Cheddar and mustard, season to taste with salt and pepper.
Drain pasta and stir into cheese sauce with the onion. Spoon into oven safe dish. (8x11 cassarole or 3 qt round).
Preheat broiler, arrange turkey bacon and tomotoes so they overlap on top of macaroni and cheese. Tuck basil into tomoatoes. Sprinkle with Parmesan.
Place under broiler until bacon is cooked and tomoatoes are lightly browned, serve immediately.

    Incredible!
    This was awesome! I had cherry tomatoes on hand, so I cut those in half and put them atop the basil leaves. Great presentation of colors! I didn't have turkey bacon, but I did have a ton of smoked turkey I needed to use up. I cut it up and mixed it in with the macaroni. Delicious! - 1/18/09
