Ingredients

2 cups Flour
1/4 cup sugar
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. allspice
1/2 tsp. salt
1 1/2 cups buttermilk or plain yogurt
3/4 cup unsweetened applesauce (In place of vegetable oil)
3 large eggs
3/4 cup shredded zucchini (squeezed to release moisture)
Directions
1. Wash zucchini
2. Grate zucchini, then squeeze to remove excess water
3. In a large bowl, whisk together first seven ingredients
4. In a medium bowl, whisk the buttermilk, applesauce, and eggs.
5. Heat griddle to medium heat
6. Add buttermilk mixture to dry ingredients
7. Mix just until blended
8. Fold in zucchini
9. Brush griddle very lightly with vegetable oil
10. Pour batter by 1/3 cup fulls onto griddle
11. Cook until bottoms are golden
12. Turn and cook until second side is golden brown and pancake is cooked thorough.
