Ingredients

    1 box Duncan Hines Spice Cake Mix
    1-1lb can Pumpkin
    1/2 cup Flaxseed Meal

Directions

1. Preheat oven to 350 degrees
2. Spray muffin tin with cooking spray or line with
paper liners
3. Combine cake mix, pumpkin and flaxseed
meal using an electric mixer until blended.
Be careful to avoid over mixing.
4. Bake for 25 minutes or until a toothpick
inserted in the middle comes out clean.

*note: May sprinkle tops with cinnamon sugar
before baking if a sweeter taste is
desired.

Yields: approximately 18

    yummy, make sure you let them cool before eating them as they taste MUCH better than straight from the oven. I'm going to try sprinking with splenda next time. - 9/6/07
