Number of Servings: 6

Ingredients

    2lb red cabbage
    2 onions
    2 cloves garlic
    1/4 tsp nutmeg freshly grated
    1/4 tsp ground cinnamon
    1/4 tsp ground cloves
    3 tbsp brown sugar
    3 tables spoons wine vinegar, i like to use balsamic
    salt and pepper to season

    you can add 1/2 oz butter if you want like, this will help make it glossy, but isn't allowed for in the nutritional info

    You can also add apples to each layer as a variation - again not allowed for in nutritional info

Directions

Pre heat the oven to 150C /Gas Mark 2

Discard the outer leaves of the cabbage and the hard stalk, then shred finely.

Finely chop the onion and garlic

In a large casserole dish, arrange a layer of shredded cabbabge, seasoned with salt and pepepr, then a layer of chopped onions (and apples if adding).

Continue building layers until everything is in.

Pour in the wine vinegar (and the butter if using), put a lid on the casserole and let it cook very slowly in the oven for 1.5 - 2 hours.

Stir once or twice during cooking

Serve with lamb hot pot or similar

    Very Good
    So yummy and the colour is great. I makes a huge amount (we are only 2 people and a cat) but it seems to freeze well so I can whip it out of the freezer as a ready made side dish. I didn't have nutmeg so used a little allspice. - 6/25/11
