Number of Servings: 2

Ingredients

    * Dole Classic Romaine Salad Blend, 1.25 cup
    * Daisy Light Sour Cream, 4 tbsp
    * Goya Black Beans, 1 cup
    * Sargento's Reduced Fat Sharp Cheddar Cheese, 1 cup
    * Jalapenos, 0.25 cup
    * Utz White Corn Tortilla Chips, 2 oz
    * Chi-chi's Fiesta Salsa Medium, 4 tbsp
    * Perdue Shortcuts Carved Chicken Breasts Southwest, 1.5 cup

Directions

Microwave the black beans in a bowl for 1 minute.

Cut the chicken strips into cubes if you like and microwave them in a bowl for 30 seconds.

You can really mix the ingredients however you prefer. I like to have two medium sized dishes and layer salad, tortilla chips, chicken, black beans, cheese, salsa, jalapenos and sour cream in each dish in that order.

Enjoy!

    I think I would reverse the proportions of salsa and cheese, but otherwise, this one sounds right tasty! Thank you for sharing this! Sounds like a freat way to use up leftover chicken too. - 10/21/08
